France


While wine was not invented in France, she is the mothership of wine.  In this class, we will explore wines from different regions of France.  We will learn about how geography, terroir, and climate affect the grapes.   We will continue to learn about food pairings, one of which may be unexpected.


This class is a favorite.  Sparkling wine was not invented/discovered in Champagne.  It was the result of a serendipitous accident in the Languedoc.  We'll start this class by sampling a wine from the place where this "accident" happened.  Our final wine will be a Sauternes.  Jonathan Swift said, "It was a brave man who first ate an oyster."  Sauternes is the oyster of the wine world; it is made from grapes that have been affected by the fungus botrytis cinerea.
