Hush puppies
220 grams Anson Mills fine white cornmeal
148 grams Bob’s Red Mill 1 to 1 Baking Flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 teaspoons salt
1/2 teaspoon black pepper
2 eggs
1 1/4 cups buttermilk
1/2 cup chopped green onions
Oil for frying
Heat oil to 350 degrees.
Stir together the cornmeal, flour, sugar, baking powder, baking soda, salt, and pepper. In a separate bowl, whisk together the eggs and buttermilk. Add the wet ingredients to the dry ingredients, and mix well. Add the green onions and stir gently until well combined. Let this mixture rest for about 5 minutes.
Drop by rounded tablespoons into the hot oil. Fry until golden brown, about 3 minutes. Turn the hush puppies, if necessary, to make sure that they brown evenly.
