Waffle Cones


4 ounces (1 stick) butter

100 grams dark brown sugar 

2 teaspoons vanilla extract

120 grams egg whites

100 grams white rice flour

1/2 teaspoon salt


Preheat a waffle cone maker. 


Melt the butter, and stir in the brown sugar until well combined.  Add the vanilla extract and egg whites, and stir until well incorporated. Fold in the flour and salt. Stir until there are no more lumps.  Because there’s no gluten, there’s no risk of making the batter tough by over stirring it. The batter will be thin. 


Pour about 2 tablespoons of batter on the waffle iron, and cook according to the manufacturer’s directions. Roll into a waffle. 


Yield : 8 waffles
