Shrimp and Avocado Salad
Green Goddess Dressing
½ cup Blue Plate Mayonnaise
½ cup sour cream
2 tablespoons sherry vinegar
2 cloves garlic
Your choice of herbs
Salt and pepper, to taste
Put all ingredients in a blender and pulse until well combined. The herbs will give the dressing a light green hue.
Note about the herbs…For the herbs, one of my go-to combinations is 6 fresh basil leaves, 1 teaspoon dried tarragon, 1 teaspoon dried sage, and ½ teaspoon dried thyme. However, I see Green Goddess dressing as an opportunity to “clean the fridge.” Use whatever herbs you have on hand that aren’t looking their best. Be creative!
Crispy Tortilla Strips
4 corn tortillas
Oil for frying
Heat oil to 350oF. Slice the tortillas thin, about 1/8”. Fry until crispy.
Salad
4 cups lettuce
½ cup Green Goddess dressing (above)
1 pound spicy boiled shrimp
2 small avocados, diced into ½” cubes
Crispy tortilla strips
Mix the lettuce with the dressing. Divide among 4 plates. Garnish each salad with shrimp, avocado, and crispy tortilla strips.
Yield: 4 salads
