Spoonbread


10 ounces frozen corn, thawed

⅓ cup sugar

¼ cup cornmeal

¼ teaspoon baking powder

½ teaspoon salt

½ cup (4 ounces) butter, softened

1/3 cup masa harina

¼ cup water

2 eggs

2 tablespoons heavy cream


Preheat the oven to 350 degrees.


Pulse the corn in a food processor until coarsely chopped.


Combine the sugar, cornmeal, baking powder, and salt.  Mix well and set aside.


Using a mixer, beat the butter until it is fluffy and becomes lighter in color.  Add in the masa harina and mix well.  Add the water, eggs, and heavy cream, and beat until well combined.  Stir in the cornmeal mixture.  Fold in the corn.


Line a 9 inch square pan with foil and grease.  Pour the mixture into the prepared pan.  Cover and seal tightly with foil.


Bake for about 45 minutes, until set.


After you remove it from the oven, carefully uncover and let sit for 15 minutes before cutting.
