Pound Cake
55 grams coconut flour
30 grams potato starch
2 teaspoons baking powder
1/4 teaspoon salt
6 eggs
125 grams butter
30 grams white chocolate
125 grams sugar
1 teaspoon vanilla extract
Preheat oven to 350oF. Spray a glass loaf pan with non-stick spray.
Mix the coconut flour, potato starch, baking powder, and salt and set aside.
Crack the eggs into a cup that can be easily poured into chute of a food processor.
Chop the chocolate into small pieces. Combine the chocolate and butter. Heat until the butter is melted. It’s ok if the chocolate is not fully melted.
Pour the chocolate butter mixture and vanilla extract into a food processor and process for 15 seconds. With the food processor running, slowly pour in the sugar. Once the sugar is well mixed, pour in the eggs, one at a time. With the food processor still running, slowly pour in the dry ingredients. Process until smooth.
Pour the mixture into the prepared pan. (It will be thin, the consistency of pancake batter.) Let sit at room temperature for 10 minutes.
Bake for 35 – 45 minutes, until the top and sides are golden brown.
