Rustic Cornbread

Rustic Cornbread


I love all kinds of cornbread.  This is a rustic cornbread that does not contain any flour.  If you like a cakey cornbread, you might want to try the cornbread muffin recipe.


Nonstick spray or 3 -4 tablespoons melted butter

1 cup cornmeal

¾ teaspoon salt

½ teaspoon baking soda

½ teaspoon baking powder

1 cup buttermilk

1 egg


Preheat oven to 425°.  Spray a 12-cavity muffin tin with nonstick spray or brush melted butter in the cavities.  Place the muffin tin in the oven while you prepare the batter.


Combine the cornmeal, salt, baking soda, and baking powder in a large bowl.  Stir to combine.  Add the buttermilk and egg.  Stir until well combined.


Carefully remove the muffin tin from the oven and fill the cavities with the batter.


Bake for about 15 minutes, until golden brown.
