Tiramisu

Tiramisu


1/2 cup plus 2 tablespoons creme de cacao

1/2 cup brewed espresso

16 round ladyfingers

1 pound Mascarpone

2 eggs, separated

1/3 cup powdered sugar

cocoa, for dusting


Mix 1/4 cup plus 2 tablespoons of creme de cacao with the espresso.  Lay the ladyfingers in a single layer in a sheet pan, and pour this mixture over them.


Beat together the mascarpone cheese, egg yolks, sugar, and remaining 1/4 cup of creme de cacao until smooth.


Beat the egg white until stiff and fold them into the Mascarpone mixture.


Place one ladyfinger in each bowl, top with 3 tablespoons of the Mascarpone mixture, top with another ladyfinger and 3 more tablespoons of Mascarpone mixture.  Dust with cocoa. Refrigerate until ready to serve.
