Spicy Cheese Crackers


1 cup (146 grams) Bob’s Red Mill 1 to 1 Baking Flour, plus more for dusting

1 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon xanthan gum

1/8 teaspoon cayenne pepper

4 ounces sharp Cheddar cheese, finely grated

4 ounces unsalted butter


Combine the flour, peppers, salt, and xanthan gum in a good processor. Process until well combined. Add the cheese and butter. Process until the dough forms a ball.


Roll the dough into a thin layer on a floured surface. Cut the dough into squares. Place the crackers on a sheet tray and refrigerate until firm, at least 30 minutes.


Preheat the oven to 350 degrees. Place the firm crackers on a sheet tray lined with parchment paper. Bake for 15-20 minutes. Cool completely before serving.
